This delicious chicken salad is one of the quick and easy Chinese recipes that satisfy your craving for green lettuce, a nutritious and cool way to enjoy your summer or enjoy the Mandarin orange when it's citrus season.

Chicken breast or thighs -- 1 cup, skinless, boneless, shredded, cooked
Romaine lettuce -- 10 ounces
Oranges -- 4
Carrots -- 1/3 cup, shredded
Peanuts -- 1/3 cup, dry-roasted, whole or chopped
Crispy chow mein -- 1/4 cup, crispy wonton toppings work fine
For the dressing:
Vegetable oil -- 1/2 cup
Apple cider vinegar -- 1/4 cup
Low soldium soy sauce -- 3 tablespoons
Honey -- 1/2 tablespoon
Dark sesame oil -- 1 teaspoon
Garlic -- 2 clove, minced
Ginger -- 1/2 teaspoon, minced
Smooth peanut butter -- 1/4 cup
Salt -- 1 teaspoon
Ground black pepper -- 1/2 teaspoon
Peel the oranges and separate them into segments. You can remove the white membranes if you want to. But my grandmother taught me not to do it, because the membranes are good for your immune system according to Chinese medicine.
Roughly chop the peanuts with knife if your prefer small pieces, or use a food processor.
Put all the ingredients for the dressing together, whisk well until smooth.
Toss together the all the main ingredients you prepared.
Drizzle the salad dressing on top of the salad.
Garnish it with crispy chow mein or wonton toppings.
