Tear apart the cooked chicken breast into small, thin strips so that it can be in every bite.
Cut the iceberg lettuce into thin strips, too, about 1/4 inch wide. If they are too long, cut into shorter ones for easier eating.
Toast the sliced almonds and sesame seeds to make them crisp. Want a sign of their readiness? When they are popping, they are done. (It's optional if you are in a hurry, just add them in).
In the mean time, slice the green onions and chop the cilantro.
Put a saucepan over medium heat to heat the oil, throw in a few noodles to test the oil temperature. If the noodle puff up immediately, it's ready for you to put in all the noodles you prepared.
